Pesto Pasta Salad

Ingredients:

1 Lb. Pasta, cooked
Handful of Arugula
Cherry Tomatoes, sliced
Mozzarella Pearls
1 small Red Onion, sliced
Green Olives, sliced

For the Dressing:

3/4 C. Pesto (Homemade or store-bought)
1/4 C. Reserved pasta water
2 TBS. Mayo
1/2 C. Plain Yogurt or Greek Yogurt
Juice of 1 Lemon
Salt
Cracked Black Pepper

1. Cook pasta according to package directions. Reserve a 1/4 cup of the pasta water to use for the dressing. Drain pasta and rinse in cold water.

2. Combine pasta, tomatoes, arugula, red onions, green olives, and mozzarella cheese pearls in a large salad bowl.

3. Make the dressing by combining the ingredients listed above.

4. Dress and toss the pasta salad. Serve and enjoy immediately.
