Ingredients

  • 3 ripe bananas (the riper, the better)
  • 1/3 cup butter, melted
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp Ceylon cinnamon
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • 1/2 cup date sugar (or coconut sugar)
  • 1 1/2 cups almond flour (or all-purpose flour)
  • Dark chocolate chips (HU brand recommended for no refined sugar)

Directions

  1. In a large mixing bowl, mash the ripe bananas with a fork. Add melted butter, beaten eggs, and vanilla extract. Whisk until smooth and combined.
  2. To the same bowl, add baking soda, cinnamon, sea salt, sugar, and flour. Mix until just combined — don’t overmix.
  3. Gently fold in the dark chocolate chips using a rubber spatula.
  4. Pour the batter into a greased or parchment-lined loaf pan. Sprinkle extra chocolate chips on top for a gooey finish.
  5. Bake at 350°F for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread cool completely before slicing. Serve warm or at room temperature — and enjoy every bite!
