Cool cucumbers, leafy greens, and red onion are paired with crispy spiced chickpeas, feta cheese, and fresh dill, then tossed in a rich, lemony yogurt-based dressing. Ingredients

    • Fresh leafy greens (any blend)
    • 3–4 Persian cucumbers, sliced
    • ½ red onion, thinly sliced
    • 1–2 cans cooked garbanzo beans, drained, rinsed, and patted dry
    • Feta cheese crumbles
    • 1 tsp fresh dill, chopped (or more to taste)

    • 1 cup full-fat Greek yogurt
    • ½ cup mayonnaise
    • 2 garlic cloves, crushed
    • 2 tbsp freshly squeezed lemon juice
    • 2 tbsp fresh dill, chopped
    • Salt
    • Black pepper
    • Onion powder
    • 1–2 tbsp water, as needed

    Directions

    1. Drain and thoroughly rinse the garbanzo beans until the water runs clear and no longer bubbly. Spread them on a kitchen towel or paper towels and pat dry, or let them air-dry completely. (Dry beans = crispy beans.)
    2. Place the dried garbanzo beans on a parchment-lined baking sheet. Drizzle with olive oil and season generously with salt, black pepper, paprika, chili powder, and cumin. Toss to coat. Bake at 375°F for 30–45 minutes, shaking the pan halfway through, until golden and crispy.
    3. Assemble the salad by layering leafy greens, cucumbers, red onion, roasted chickpeas, feta cheese, and fresh dill in a large bowl.
    4. To make the dressing, combine all dressing ingredients except the water in a mixing bowl. Whisk until smooth, adding water as needed to thin to your desired consistency. Refrigerate for 30 minutes to allow the flavors to develop.
    5. Pour the dressing over the salad, toss to combine, and enjoy.
