Greek Pasta Salad

Tender pasta is tossed with crisp cucumbers, juicy tomatoes, tangy feta, and briny olives, then finished with your favorite Greek dressing. Simple, delicious, and ready to impress.

Ingredients

  • 1 lb pasta of your choice (short shapes like rotini, penne, or fusilli work best)
  • 4 Persian cucumbers, chopped or diced
  • Kalamata olives, pitted if possible
  • Cherry or grape tomatoes, sliced or diced
  • Pepperoncini
  • 1 small red onion, thinly sliced
  • Feta cheese, cubed or crumbled
  • Greek dressing of your choice (try @abs_smokehouse)
  • Olive oil
  • Salt

Directions

  1. Bring a pot of salted water to a rolling boil. Cook the pasta to al dente according to package directions. Drain, but do not rinse. Drizzle with olive oil and gently toss to prevent sticking. Set aside to cool.
  2. While the pasta cooks, wash and chop all other ingredients.
  3. Once the pasta has cooled, combine it with cucumbers, olives, tomatoes, pepperoncini, red onion, and feta cheese in a large salad bowl.
  4. Drizzle with your favorite Greek dressing and toss to coat. Add extra pepperoncini and feta if desired.
  5. Cover and refrigerate for at least 2 hours to let the flavors blend.
  6. Before serving, add a bit more dressing if needed. Enjoy as is, or top with grilled chicken or steak for a complete meal!
