Ingredients

  • 1–1½ lbs boneless chicken breast, cubed
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 large red onion, roughly chopped
  • 1 yellow bell pepper, chopped
  • 3–4 cloves garlic, minced
  • ⅓ cup coconut aminos (or soy sauce)
  • ⅓ cup avocado oil
  • ¼ cup honey
  • Salt
  • Black pepper
  • Crushed red pepper flakes
  • Smoked paprika
  • Ground ginger
  • Juice of 1 small lemon

Directions

  1. In a large mixing bowl, combine the cubed chicken, zucchini, red and yellow bell peppers, and red onion.
  2. Add the minced garlic, then season with salt (use lightly if using soy sauce), black pepper, smoked paprika, crushed red pepper flakes, and ground ginger.
  3. Pour in the avocado oil, coconut aminos, honey, and lemon juice. Mix well to evenly coat all the ingredients.
  4. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
  5. Thread the marinated chicken and vegetables onto skewers.
  6. Grill over medium-high heat for 5–7 minutes per side, depending on the thickness of the chicken, until fully cooked and slightly charred.
  7. Serve warm with white rice and fresh pineapple. Garnish with chopped parsley and drizzle with extra coconut aminos or soy sauce, if desired. Enjoy!
