Ingredients

  • ⅔ cup unsweetened pumpkin purée
  • 1 cup rolled oats
  • 2 eggs
  • 2 tsp baking powder
  • 3–4 tbsp pure maple syrup
  • 1 tsp Ceylon cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt
  • White chocolate chips

Directions

  1. Preheat the oven to 350°F and line a muffin tin with liners.
  2. Add all ingredients except the white chocolate chips to a blender and blend until smooth.
  3. Pour the batter evenly into the prepared muffin tin.
  4. Top each muffin with white chocolate chips.
  5. Bake for 20–25 minutes, until set and lightly golden.
  6. Allow to cool for 5 minutes, then enjoy.
