Ingredients

  • 2–3 tbsp butter
  • Cooked rotisserie chicken or chicken breast, shredded
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery ribs, diced
  • 2–3 cloves garlic, minced
  • 8–10 cups chicken stock or chicken broth
  • 1–2 cups noodles or pasta of choice
  • Salt, to taste
  • 1 tsp black pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • ½ tsp crushed red pepper flakes
  • Juice of 1 lemon
  • Fresh parsley, chopped

Directions

  1. Cook the chicken and shred it, then set aside. Rotisserie chicken works well and adds extra flavor.
  2. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery and sauté for a few minutes until softened.
  3. Add the garlic and cook for 1 minute, until fragrant.
  4. Stir in the seasonings and mix well.
  5. Pour in the chicken stock or broth and bring to a boil. Taste and adjust salt as needed.
  6. Add the noodles or pasta and cook just until al dente. Remove the pot from the heat.
  7. Stir in the shredded chicken until evenly combined.
  8. Finish with a squeeze of lemon juice and plenty of fresh parsley. Stir, then serve in individual bowls with cracked black pepper if desired. Enjoy!
