Lebanese Stuffed Grape Leaves (Part 2)

Lebanese Stuffed Grape Leaves (Part 2)

This second part of the Lebanese stuffed grape leaves recipe brings everything together, slowly simmering the rolled leaves with bone-in meat, potatoes, garlic, and lemon for deep, comforting flavor. Cooked gently under pressure, the grape leaves become tender while absorbing the richness of the broth and the brightness of fresh lemon juice. This traditional method creates a beautifully balanced dish that’s best enjoyed after resting, allowing all the flavors to fully develop.

Cook Time

1 hours 35 minutes

Ingredients

  • Bone-in meat (lamb is traditional, but any bone-in meat works)
  • 4–5 potatoes, thinly sliced
  • 4 garlic cloves, minced
  • Salt
  • Black pepper
  • Crushed red pepper flakes
  • Olive oil
  • 5–6 cups hot water
  • ½ cup freshly squeezed lemon juice
  • Lemon slices, for garnish

Directions

  1. Season the meat generously with salt and black pepper.
  2. Heat olive oil in a large pot over medium heat. Once hot, add the meat and sear on both sides for 2–3 minutes. Remove from the pot and let rest for 5 minutes.
  3. Layer the thinly sliced potatoes over the meat. (Tomato slices can be added or substituted if desired.) Season with salt, black pepper, crushed red pepper flakes, and drizzle with olive oil.
  4. Layer the stuffed grape leaves on top, packing them tightly. One jar typically creates two layers. Season the top layer with salt and black pepper, scatter the minced garlic, and drizzle with olive oil. If using more than one jar, season each layer.
  5. Place a small heat-safe plate on top of the grape leaves to weigh them down. Carefully pour in the hot water, ensuring the grape leaves and plate are fully submerged. For extra pressure, place a heat-resistant bowl filled with water on top of the plate.
  6. Cook over medium heat for 45–50 minutes, or until most of the liquid has been absorbed.
  7. Remove the bowl and plate, then add 1 cup of freshly squeezed lemon juice. Reduce the heat to low and cook for an additional 30 minutes.
  8. Remove from heat and let rest for 30 minutes before transferring to a serving dish. Garnish with lemon slices and enjoy.
