Ingredients

  • 2 cups white rice (basmati recommended), rinsed and soaked
  • 2–3 cups broccoli florets (fresh or frozen)
  • 1–1½ lbs cubed chicken breast
  • 3–4 cups chicken or vegetable broth
  • 4 tablespoons butter, divided
  • Olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Oregano
  • Crushed red pepper flakes

Directions

  1. Rinse the rice in cold water until it runs clear, then soak for at least 30 minutes.
  2. Season the cubed chicken with salt, black pepper, garlic powder, paprika, and crushed red pepper flakes. Drizzle with olive oil and mix to coat evenly.
  3. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the chicken and cook for about 3 minutes per side, until golden and no longer pink. Remove from the pan and set aside.
  4. In the same pan, add the diced onion and cook until golden and translucent.
  5. Add the minced garlic and cook until fragrant, about 30 seconds.
  6. Add the soaked rice along with 2 tablespoons of butter. Season with salt, black pepper, and oregano, and toast the rice for a few minutes, stirring frequently.
  7. Pour in the broth (3–4 cups, depending on rice type). Stir to combine.
  8. Once the liquid begins to bubble, add the cooked chicken back into the pan. Cover and simmer over low heat until the rice is nearly cooked — there should still be a little liquid left.
  9. Add the broccoli florets on top. Cover again and cook for another 6–7 minutes, until the broccoli is tender and the liquid is fully absorbed.
  10. Remove from heat and immediately top with freshly shredded sharp cheddar cheese.
  11. Garnish with fresh parsley and serve warm. Enjoy!
