Ingredients

  • 1 cup all-natural peanut butter
  • 1 cup coconut sugar
  • 1 egg
  • Dark chocolate chunks
  • Sea salt (for finishing)

Directions

  1. In a bowl, whisk together the peanut butter, coconut sugar, and egg. Once the egg is fully incorporated, switch to a rubber spatula and mix until smooth.
  2. Fold in the dark chocolate chunks until evenly distributed.
  3. Scoop spoonfuls of the dough onto a parchment-lined baking sheet, spacing them apart.
  4. Use a fork to gently flatten each cookie and create a crisscross pattern. This helps the cookies cook evenly since peanut butter dough is dense.
  5. Add extra chocolate chunks on top of each cookie if desired.
  6. Bake at 350°F for 10–12 minutes, until the edges are set but the centers remain soft.
  7. Sprinkle with a pinch of sea salt and allow the cookies to cool on the baking sheet for 5–10 minutes to firm up before serving. Enjoy!
