Ingredients

    For the Muffins

    • ½ cup butter, melted
    • ½ cup date sugar or sweetener of choice
    • 2 eggs
    • 1 cup pumpkin purée
    • 1 tablespoon milk
    • 1 tablespoon vanilla extract
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 2 teaspoons pumpkin pie spice
    • ¼ teaspoon sea salt
    • 1½ cups all purpose flour
    • Dark chocolate chips, to taste

For the Cream Cheese Filling and Frosting

    • 8 ounces cream cheese, softened
    • ¼ cup Greek yogurt
    • ¼ cup pure maple syrup
    • 1 teaspoon vanilla extract

    Directions

    1. Prepare the cream cheese mixture. Add the softened cream cheese, Greek yogurt, maple syrup, and vanilla extract to a mixing bowl. Beat with a handheld mixer until smooth and creamy. Refrigerate while preparing the muffin batter.
    2. Prepare the wet ingredients. Preheat the oven to 350°F and line a muffin pan with muffin liners. In a large mixing bowl, combine the melted butter and date sugar. Whisk until well combined.
    3. Add the eggs. Add the eggs and whisk until smooth.
    4. Add the pumpkin. Stir in the pumpkin purée, milk, vanilla extract, baking powder, baking soda, pumpkin pie spice, and sea salt. Whisk until evenly combined.
    5. Add the flour. Add the flour and gently mix just until no dry flour remains. Avoid overmixing to keep the muffins soft and tender.
    6. Add the chocolate. Gently fold the dark chocolate chips into the batter with a spatula.
    7. Fill the muffins. Add enough pumpkin batter to fill each muffin cup about one third of the way. Spoon a dollop of the chilled cream cheese mixture into the center, then cover with additional pumpkin batter.
    8. Add the topping. Sprinkle additional dark chocolate chips over each muffin.
    9. Bake. Bake at 350°F for 20 to 25 minutes, or until the muffins are set and a toothpick inserted into the pumpkin portion comes out mostly clean.
    10. Cool. Allow the muffins to cool in the pan for at least 5 minutes before transferring them to a cooling rack.
    11. Finish. Once slightly cooled, top with the remaining cream cheese mixture and a light sprinkle of pumpkin pie spice. Enjoy!
