Roasted Brussels Sprouts

Roasted Brussels Sprouts

These roasted brussel sprouts are crispy on the outside, tender on the inside, and packed with bold, savory flavor. Parboiling first ensures they cook evenly and stay fluffy inside, while roasting them smashed and coated in avocado oil, spices, balsamic vinegar, and freshly grated Parmesan creates golden, caramelized edges. They’re simple to make, incredibly satisfying, and the perfect side dish for weeknight dinners, holidays, or anytime you want vegetables that actually steal the show.

Ingredients

  • Brussels sprouts
  • Avocado oil
  • Balsamic vinegar
  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Cayenne pepper
  • Parmesan cheese, freshly grated

Directions

  1. Fill a large pot with cold water, add salt, and bring to a boil.
  2. Wash and trim the Brussels sprouts, then add them to the boiling water. Boil for 8–10 minutes, until they are fork-tender but still firm.
  3. Remove the sprouts from the boiling water and immediately transfer them to a bowl of cold water.
  4. Drain well and lay them out on a kitchen towel or paper towels. Pat completely dry, then let them air-dry for about 10 minutes to remove excess moisture and prevent mushiness.
  5. Once fully dry, place the sprouts in a mixing bowl and season with salt, black pepper, paprika, garlic powder, and cayenne pepper. Drizzle with avocado oil and add a splash of balsamic vinegar. Toss to combine.
  6. Add freshly grated Parmesan cheese and toss again.
  7. Arrange the sprouts on a greased baking sheet, making sure not to overcrowd them.
  8. Use the bottom of a cup or mason jar to gently smash each sprout flat.
  9. Top with more freshly grated Parmesan cheese.
  10. Bake at 425°F for 15–20 minutes. Flip the sprouts, add more Parmesan, and bake for another 15–20 minutes, broiling for the last 2–3 minutes, until golden and crispy.
  11. Enjoy as is, or finish with a drizzle of balsamic glaze before serving.
