Ingredients

    • Raw shrimp (deveined, thawed, rinsed, and patted dry)
    • Note: If using Red Argentinian Shrimp, it will appear pink when raw.
    • Salt
    • Black pepper
    • Chili powder
    • Chipotle powder
    • Oregano
    • Smoked paprika
    • 2 cloves crushed garlic
    • Juice of 1 lime
    • Drizzle of olive oil

    • Romaine lettuce (or chopped romaine of your choice)
    • 1 avocado, diced
    • ½ red onion, thinly sliced
    • Frozen corn, cooked or sautéed
    • Green onions, diced
    • Cherry tomatoes, sliced or chopped
    • Freshly shredded cheese (Monterey Jack or sharp cheddar)
    • Optional: Crushed tortilla chips for extra crunch

    • 1 avocado
    • 1 bunch fresh cilantro, washed
    • ½ cup sour cream
    • ½ jalapeño
    • 2 garlic cloves
    • 1 tablespoon olive oil
    • Juice of 1 lime
    • Salt and black pepper, to taste

    Directions

    1. Season the shrimp with salt, pepper, chili powder, chipotle powder, oregano, smoked paprika, crushed garlic, lime juice, and olive oil. Set aside while you prepare the salad and dressing.
    2. In a blender, combine all dressing ingredients until smooth and creamy. Adjust seasoning to taste.
    3. Heat a pan over medium-high heat and cook the shrimp for 2–3 minutes per side until opaque and slightly golden. Remove from heat.
    4. Assemble the salad with romaine, avocado, red onion, corn, green onions, tomatoes, and cheese.
    5. Top with the cooked shrimp and drizzle with the avocado-cilantro dressing.
    6. Garnish with crushed tortilla chips, toss lightly, and enjoy!
