Tabbouleh Salad

Ingredients

  • 3 bunches curly parsley, washed and finely chopped
  • 4 Roma tomatoes, washed and finely diced
  • 1–2 bunches green onions, washed and finely diced
  • Handful of mint leaves, washed and finely chopped
  • 1/2 cup bulgur wheat (#1 fine grind)
  • 1/3–1/2 cup extra-virgin olive oil
  • Juice of 2 lemons
  • Salt and black pepper, to taste

Directions

  1. Place the bulgur in a bowl and cover with 1 cup of hot water. Let it soak for about 20 minutes, or until the water is fully absorbed and the grains are soft.

  2. While the bulgur soaks, wash, dry, and finely chop the parsley, tomatoes, green onions, and mint. Add them all to a large salad bowl.
  3. Once the bulgur is ready, fluff it with a fork and add it to the bowl with the chopped vegetables.
  4. Drizzle with extra-virgin olive oil, lemon juice, and season generously with salt and black pepper. Toss well to combine.
  5. Garnish with crisp romaine lettuce leaves and fresh lemon slices for serving. Enjoy chilled or at room temperature!
